Sweet potato magic

Filed under: Baltimore, Dining In — Grace @ 7:12 pm

I found this recipe on a blog by “balaboosta.” It’s called “Not Sweet Pan Fried Sweet Potatoes” and it is very tasty.
I like making it for breakfast (and eating it for lunch too!)
Ingredients:
4 c Sweet potatoes (peeled and cut into small cubes)
2 tbsp Extra virgin olive oil
1 tsp salt
1 tsp pepper
2 tsp cumin
2 tsp garlic powder
Procedure (see my slideshow):
1. Heat skillet
2. Add oil
3. Add cubed sweet potatoes
4. Sprinkle salt, pepper, garlic and cumin. Toss together.
5. Let potatoes sit for 4-5 min so edges start to brown
6. Toss again and let potatoes sit for another 4-5 min until all sides are crispy!
7. Enjoy.

  1. Why not fresh chopped garlic, as opposed to garlic powder?

  2. I think that fresh chopped garlic would also taste good, but the flavor would be stronger than garlic powder. If you don’t have garlic powder, the fresh garlic would be a good alternative. Or, just salt and cumin would taste fine also. The garlic powder is for those who don’t want to bother chopping up garlic, I assume.
